Ingredients

  • 24-26 oz ground beef
  • 1-2 limes (zested and juiced)
  • 1 red onion, thinly sliced
  • 1 poblano pepper, diced
  • 2 roma tomatoes, diced
  • 4-6 tbsp sour cream
  • 1 cup Mexican cheese blend
  • 8 oz guacamole
  • 1 (6 oz) can tomato paste
  • 8-12 small tortillas
  • 2-3 tbsp Dr. C's Chipotle Fiesta Dust

Instructions

1. Preheat the Oven

Set your oven to 425°F (218°C).

2. Prep the Ingredients

  • Dice the roma tomatoes.
  • Thinly slice the red onion.
  • Dice 3-4 tbsp of the red onion (for garnish).
  • Zest the limes and cut them in half.

3. Cook the Filling

  1. Heat a drizzle of oil in a skillet over medium-high heat.
  2. Add the poblano pepper and sliced red onion.
  3. Season with a pinch of salt and pepper and sauté until slightly softened (3-4 minutes).
  1. Add the ground beef, breaking it up with a spatula. Cook until browned (4-5 minutes).
  2. Season with a pinch of salt and pepper and add 2 tbsp of Dr. C's Chipotle Fiesta Dust.
  3. Stir in half the diced tomatoes, tomato paste, and ½–⅓ cup of water.
  4. Let simmer until thickened and well combined.

4. Assemble the Flautas

  1. Lightly oil the back of a tortilla.
  2. Add a scoop of beef filling and a pinch of Mexican cheese blend.
  3. Roll tightly and place seam-side down on a lined baking sheet.
  4. Repeat until all the filling is used.

5. Bake the Flautas

Bake at 425°F for 8-10 minutes, or until crispy and golden brown.

6. Make the Chipotle Lime Crema

While the flautas bake, mix together:

  • 4-6 tbsp sour cream
  • Lime zest
  • Juice from 1 lime
  • 1-2 tsp Dr. C's Chipotle Fiesta Dust
  • Add cold water (1 tsp at a time) until it reaches a drizzly consistency.

7. Serve & Enjoy!
