Ingredients
- 24-26 oz ground beef
- 1-2 limes (zested and juiced)
- 1 red onion, thinly sliced
- 1 poblano pepper, diced
- 2 roma tomatoes, diced
- 4-6 tbsp sour cream
- 1 cup Mexican cheese blend
- 8 oz guacamole
- 1 (6 oz) can tomato paste
- 8-12 small tortillas
- 2-3 tbsp Dr. C's Chipotle Fiesta Dust

Instructions
1. Preheat the Oven
Set your oven to 425°F (218°C).
2. Prep the Ingredients
- Dice the roma tomatoes.
- Thinly slice the red onion.
- Dice 3-4 tbsp of the red onion (for garnish).
- Zest the limes and cut them in half.

3. Cook the Filling
- Heat a drizzle of oil in a skillet over medium-high heat.
- Add the poblano pepper and sliced red onion.
- Season with a pinch of salt and pepper and sauté until slightly softened (3-4 minutes).

- Add the ground beef, breaking it up with a spatula. Cook until browned (4-5 minutes).
- Season with a pinch of salt and pepper and add 2 tbsp of Dr. C's Chipotle Fiesta Dust.
- Stir in half the diced tomatoes, tomato paste, and ½–⅓ cup of water.
- Let simmer until thickened and well combined.

4. Assemble the Flautas
- Lightly oil the back of a tortilla.
- Add a scoop of beef filling and a pinch of Mexican cheese blend.
- Roll tightly and place seam-side down on a lined baking sheet.
- Repeat until all the filling is used.

5. Bake the Flautas
Bake at 425°F for 8-10 minutes, or until crispy and golden brown.
6. Make the Chipotle Lime Crema
While the flautas bake, mix together:
- 4-6 tbsp sour cream
- Lime zest
- Juice from 1 lime
- 1-2 tsp Dr. C's Chipotle Fiesta Dust
- Add cold water (1 tsp at a time) until it reaches a drizzly consistency.
