Ingredients (Serves 4)

  • 4 chicken cutlets

  • 8 carrots

  • 24 oz gold potatoes

  • 1/2 cup panko breadcrumbs

  • 4 Tbsp maple syrup

  • 4 Tbsp Dijon mustard

  • 4 Tbsp butter

  • 1 Tbsp Dr. C’s Magical Meat Dust

  • Salt and pepper, to taste

  • Olive oil (for roasting)


Instructions

1. Preheat & Prep

Preheat your oven to 425°F.

  • Carrots: Peel and slice into 1/2-inch pieces.

  • Potatoes: Cut into 1/2-inch wedges.

2. Make the Crispy Panko Topping

  • Melt 2 Tbsp butter in a bowl.

  • Add panko, salt, pepper, and 2 tsp of Dr. C’s Magical Meat Dust.

  • Mix well until the breadcrumbs are evenly coated.

3. Prepare the Maple Mustard Sauce

  • Melt 2 Tbsp butter in a separate bowl.

  • Stir in Dijon mustard, maple syrup, and a pinch of salt.

  • Mix until well combined.

4. Coat & Bake the Chicken

  • Lightly oil a baking sheet.

  • Place chicken cutlets on the sheet.

  • Spoon maple mustard sauce over the chicken and brush it in.

  • Evenly sprinkle the panko mixture on top of each cutlet, pressing down gently.

5. Roast the Vegetables

  • Toss carrots and potatoes with olive oil.

  • Spread them on a parchment-lined baking sheet.

  • Season well with salt, pepper, and Dr. C’s Magical Meat Dust.

6. Bake & Serve

  • Bake everything at 425°F for 20-25 minutes, until the chicken is fully cooked (internal temperature 165°F) and the carrots and potatoes are tender.

  • Drizzle extra maple mustard sauce over the chicken and serve any remaining sauce on the side for dipping.
