Chicken Gnocci Soup: A Cozy Comfort Recipe

There's nothing quite like a bowl of hearty, homemade Chicken Gnocci Soup to warm your soul on a cool day. This recipe marries tender, seasoned chicken with pillow-soft potato gnocchi, vibrant vegetables, and a rich, creamy broth perfectly balanced with a hint of spice from Dr C's Tuscan Heat Dust. Designed to serve 8-10 people, it's ideal for family gatherings or those moments when comfort food is exactly what you need. Each spoonful offers layers of flavor—from the initial sauté of aromatic vegetables to the final stir-in of fresh spinach and cream—making this dish as satisfying to prepare as it is to enjoy.

Ingredients

  • 30 oz boneless skinless chicken breasts, diced
  • 3 stalks celery, chopped
  • 1 white onion, diced
  • 2-4 cloves garlic, minced
  • 4 carrots, chopped
  • 8 cups chicken broth
  • 32 ounces potato gnocchi
  • 4 cups heavy whipping cream
  • 2 cups fresh spinach
  • 4 TBSP Dr C's Tuscan Heat Dust
  • Olive oil, salt, and pepper to taste

Prep

  • Dice the onion.
  • Mince the garlic.
  • Chop the carrots and celery.

Instructions

  1. Cook the Chicken:
Heat a skillet with a drizzle of olive oil over medium-high heat. Add the diced chicken, a sprinkle of salt and pepper, and 1-2 TBSP of Dr C's Tuscan Heat Dust. Sauté the chicken for 5-6 minutes until it's lightly browned and cooked through. Remove from the skillet and set aside.

  1. Sauté the Vegetables:
In a large pot, heat another drizzle of olive oil over medium heat. Add the chopped carrots and sauté for about 3-5 minutes until they begin to soften. Then add the celery, diced onion, and minced garlic. Sauté for an additional 2-3 minutes until the onions become translucent. Season with salt and pepper.

  1. Build the Broth:
Pour in the chicken broth and add an extra 2 TBSP of Dr C's Tuscan Heat Dust, along with more salt and pepper as needed. Bring the mixture to a boil, then gently stir in the gnocchi. Allow the soup to boil for 3-4 minutes.

  2. Simmer and Combine:
Reduce the heat to a simmer and cook for an additional 10 minutes. Return the cooked chicken to the pot.

  3. Finish with Cream and Spinach:
Roughly chop the fresh spinach and stir it in along with the 4 cups of heavy whipping cream. Cook for another 1-2 minutes until the spinach is tender. Taste the soup and adjust the seasoning if necessary—remember, the cream and broth might require extra salt!

  1. Serve and Enjoy:
Ladle the soup into bowls and serve hot. For an extra touch of indulgence, sprinkle a pinch of Parmesan cheese on top and serve with your favorite bread.

Enjoy your comforting bowl of Chicken Gnocci Soup—a delightful dish that brings warmth and flavor to every meal!
