Ingredients:

For the Meatballs:

  • 24-26 oz Ground Beef
  • ½ cup Panko Breadcrumbs
  • 4-5 Scallions, whites and greens separated
  • 1 Jalapeño, minced (remove seeds for less heat, keep them for extra spice)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Ginger Paste (or freshly grated ginger)
  • 1 ½ Tsp Sriracha
  • 1 ½ Tsp Dr. C’s Magical Meat Dust
  • Pinch of Black Pepper

For the Green Beans:

  • 1-2 lbs Green Beans, trimmed
  • 1-2 Tbsp Olive Oil
  • 1 ½ Tsp Dr. C’s Magical Meat Dust
  • (Optional) Sesame Seeds for garnish

For the Rice:

  • 2 Cups Jasmine Rice
  • 3 Cups Water
  • Salt & Pepper, to taste

For the Firecracker Sauce:

  • 4 Tbsp Mayonnaise
  • 4 Tbsp Sour Cream
  • 2 Tbsp Soy Sauce
  • 1 ½ Tbsp Honey
  • 1 ½ Tsp Sriracha (adjust to taste)

Prep Work (Before Cooking)

  1. Preheat the Oven to 425°F.
  2. Prepare the Green Beans: Trim the ends and set aside.
  3. Prep the Aromatics:
    • Slice the scallions, keeping the whites and greens separate.
    • Mince the scallion whites.
    • Core and seed the jalapeño if you prefer less heat, then mince it finely.

Step 1: The Green Beans

  1. Toss the trimmed green beans with olive oil and Dr. C’s Magical Meat Dust to coat evenly.
  2. Spread them in a single layer on a parchment-lined baking sheet.
  3. Set aside while you prepare the meatballs.

Step 2: Make the Meatballs

  1. In a large mixing bowl, combine:
    • Ground beef
    • Panko breadcrumbs
    • Minced jalapeño
    • Minced scallion whites
    • Soy sauce
    • Ginger paste
    • Sriracha
    • Dr. C’s Magical Meat Dust
    • A pinch of black pepper
  2. Mix until just combined—don’t overwork the meat.
  3. Form the mixture into 1.5-inch meatballs and place them on a foil-lined baking sheet.

Step 3: Cook the Rice

  1. Rinse the rice 2-3 times under cold water until it runs clear.
  2. Add the rice and water to a rice cooker or stovetop pot.
  3. Cook according to package instructions.
  4. Once done, fluff with a fork and season with salt and pepper to taste.

Step 4: Make the Firecracker Sauce

In a small bowl, whisk together:

  • Mayonnaise
  • Sour cream
  • Soy sauce
  • Honey
  • Sriracha (adjust to your heat preference)

Set aside.


Step 5: Bake the Meatballs & Green Beans

  1. Place the meatballs on the top rack of the oven.
  2. Place the green beans on the middle rack.
  3. Bake for 14-16 minutes, until the meatballs are cooked through and the green beans are slightly charred.
  4. Remove from heat and, if using, sprinkle the green beans with sesame seeds for extra crunch.

Step 6: Assemble & Serve

  1. Scoop fluffy jasmine rice onto a plate or bowl.
  2. Arrange spicy meatballs on top.
  3. Drizzle generously with the firecracker sauce.
  4. Serve with roasted green beans on the side.
  5. Garnish with sliced scallion greens for a pop of freshness.
